Colcannon - Irish Mashed Potatoes

Colcannon is a fabulous Irish way of making mashed potatoes. Colcannon are mashed potatoes that contain cabbage and potatoes. Both potatoes and cabbage are vegetables that are in many different cultures. Potatoes and cabbage are vegetables that can be stored for a long time, so unlike some dishes colcannon can be prepared any time of the year.

There is an old Irish tune about colcannon. So you can sing this along while you prepare colcannon.
Did you ever eat colcannon

When 'twas made with yellow cream

And the kale and praties blended

Like the picture in a dream?

Did you ever take a forkful

And dip it in the lake

Of heather-flavored butter

That your mother used to make?

And the more I think about it

When trouble we had not,

And our mothers made Colcannon
